FAJITAS BOWL
Ingredients :
- 1 tablespoon coconut butter
- 1 red onion , caramelized
- 1/2 red pepper, 1/2 yellow pepper, 1/2 green pepper , cut into strips
- 500 g chicken , cut into pieces
- 1 bag of Old El Paso Mexican spices
- 1 cup tomatoes , diced
- 1 avocado , diced
- 1 cup of grated lactose-free cheese
- Fresh coriander , chopped
- Fresh chives , chopped
- Corn chips for serving
Instructions :

Caramelize the onion: In a skillet, melt the coconut butter over medium heat. Add the red onion and let it caramelize gently, stirring occasionally, until golden and sweet.

Add the chillies: Add the red, yellow and green chilli strips to the pan and cook for a few minutes until they start to soften.

Cook the chicken: Add the chicken pieces to the pan with the vegetables and cook until golden brown and cooked through.

Seasoning: Sprinkle Old El Paso Mexican Spice Rub over the chicken and vegetable mixture. Mix well to coat all ingredients with the spices.

Add the tomatoes: Add the diced tomatoes to the pan and simmer for a few minutes so that the flavors blend well.

Prepare the toppings: Meanwhile, prepare the avocado cubes, grate the lactose-free cheese and chop the coriander and chives.

Assemble the bowl: Serve the spicy chicken mixture on corn chips or in tortillas. Garnish with the diced avocado, shredded cheese, cilantro and chives.
