Ingredients :

  • 1 tablespoon coconut butter
  • 1 red onion , caramelized
  • 1/2 red pepper, 1/2 yellow pepper, 1/2 green pepper , cut into strips
  • 500 g chicken , cut into pieces
  • 1 bag of Old El Paso Mexican spices
  • 1 cup tomatoes , diced
  • 1 avocado , diced
  • 1 cup of grated lactose-free cheese
  • Fresh coriander , chopped
  • Fresh chives , chopped
  • Corn chips for serving

Instructions :

  1. Caramelize the onion: In a skillet, melt the coconut butter over medium heat. Add the red onion and let it caramelize gently, stirring occasionally, until golden and sweet.

  2. Add the chillies: Add the red, yellow and green chilli strips to the pan and cook for a few minutes until they start to soften.

  3. Cook the chicken: Add the chicken pieces to the pan with the vegetables and cook until golden brown and cooked through.

  4. Seasoning: Sprinkle Old El Paso Mexican Spice Rub over the chicken and vegetable mixture. Mix well to coat all ingredients with the spices.

  5. Add the tomatoes: Add the diced tomatoes to the pan and simmer for a few minutes so that the flavors blend well.

  6. Prepare the toppings: Meanwhile, prepare the avocado cubes, grate the lactose-free cheese and chop the coriander and chives.

  7. Assemble the bowl: Serve the spicy chicken mixture on corn chips or in tortillas. Garnish with the diced avocado, shredded cheese, cilantro and chives.

  8. Enjoy: Serve this dish with homemade salsa or lactose-free crème fraîche for an extra touch of freshness.
